When making a gumbo in 80 qt pot

How much roux in the jar to use if you are using 40 qts of water?

If it's a dark roux, I would use 1 cup roux per gallon. So about 10 cups or 80 ounces by volume.

I finally tried the roux in a jar a couple of weeks back and used 6 quarts to 1 jar. Came out with a good consistency.

Buy a few jars of dry roux, basically baked flour, and keep adding it til you get the consistency you want.

I go with 6 quarts of liquid to 1 jar. 6 quarts is a variation of water and some type of stock.

In your case, I think you'll be good with 6 jars.
