Its just reflective foil behind the SS panel. ITs just another layer of protection from the heat down low. Up mid level the panels are not needed. We treated/smoked treated this smoker a dozen times over before ever using it to "seal" the wood. As you can see by the black on the inside.

ok... gotcha... mine is framed and ready to put metal on the sides... just doing a last check..was looking for a little round thermometer thingy today to mount on the back wall that can be read from the outside.. i think i'm gonna have a low rack option for putting a water pan to possibly cook a ham while smoking a load of sausage or whatever..
