I bought an unfrozen 11 pound turkey today that I plan on smoking the 26th or 28th of this month. I know I have to freeze it, but how early do I need to take it and thaw in my fridge before my cook date? I don't have much experience with whole turkeys, but I've learned to use my smoker this past year and want to give it a shot. TIA.

I wouldn't keep it unfrozen for ten days. Freeze it and thaw two days before in fridge. If still frozen the day you want to use it put in a sink with cool water. It will thaw completely in about six hours.

Leaving poultry in the fridge for 10 days seems risky to me. I use chicken within 36 hours of thawing it.

Why did you buy an unfrozen turkey so you could freeze it? Friday morning you could have bought it way cheap bro. Take it back for a refund ASAP.
