When I was a breakfast cook, what I would do was constantly tear the middle to keep getting the runny egg to the center, and keeping the pan oiled enough that I could constantly flip the omelette.
Also never use high heat.
But the taring the center and then pressing it into the uncooked eggs is a winner.
Another method and this one is fool proof. Is to start the omelette on the stove and finish it under the broiler. And never flip it.
I always flip a three egg, and serve it pizza style. A two egg I usually roll into a crepe form.
You should whip your whites, then fold in the yolks and make an omelette like that. Nothing like airy eggs in an omelette.

I don't think you are suppose to boil regular ziploc bags for health reasons.
You may be able to use this method, but it's not condoned.

The best way I have found is to use a nonstick pan that is properly sized for the amount of eggs you are using. Second, real butter. Third low heat. Forth tip is to cover your pan which will trap steam and cook the uncooked side enough for the fifth step which is to flip the eggs with a flick of the wrist.
Add warmed/cooked veggies and meats, sprinkle cheese, fold over in half and slide onto plate to serve.

put the oven on 300 and bake it for 5 minutes
