If he bought food and was cooking, that would be one thing. But he's asking people to bring their own meat. IMO, that's an invitation to cook your own too.

I seriously don't think it's improper unless your wife is just dead set.

There is nothing offensive about, "I like my steaks med rare, mind if I let you know when to pull it?"

They're from the Middle East. I've probably met 100 of her family members at dinners, BBQs, etc., and only 2 or 3 will eat any protein that isn't well done.

I would also probably have to teach him about hot spots, how to spread the coals, etc. There's more to grilling than just when to pull the meat. I don't want to deal with any of that. I'll just eat my chicken legs and be happy.

Look at it as one meal in a lifetime of eating.

Be a decent guest in his house and eat his food.

Chicken does best overcooked.

A medium thickness Ribeye with lots of fat will survive. Too thick and he will cook it forever. Thinner and you stand a chance of him pulling it from grill before it becomes a burnt offering.

Hamburger will be ok unless he burns it.

Take a really small portion of whatever you bring and then eat it. Then go somewhere good after you leave and get what you want, cooked the way you like.

Right, but those things are going to happen either way. No reason not to let him do it his way and then tell him to pull it when you're ready.

I think there's a science to good grilling, but I think very little that comes off the grill is inedible if cooked to the preferred temp.

Yeah, if you tell him how to spread his coals and shite, you will look like a pompous arse. It's not that important But I still think there's nothing wrong with telling him to pull your steak when you want.

But chicken should be fine too

I'm sure it's too late, but I agree with this. Smoked pork sausage, and a fatty ground meat, like 75/25. Lots of fat should make the overcooked meat edible and also cause some flare-ups for entertainment.
