Blazing Saddles. The reason? Because it wouldn't be made today. I'll give you another example of the genre - 48 Hrs. A reboot would be great but there's nobody in Hollywood with the balls to touch it.

Is yes an acceptable answer? I mean even in the dimmest twilight of his career he made funny movies. The problem is... you watch one of his movies and you go "That is his best movie!"
Then you watch another and say the same thing.
I do, however, think he did his best work with Gene Wilder and the late Madeline Kahn. Wilder was the perfect actor for the inspired lunacy of Mel Brooks. Kahn was the actress who he could get the most laughs out of, even in the smallest of parts. When he stopped making movies with them I think the laughs died down a bit.
Go forth and watch Madeline Kahn picking out Roman soldiers for the orgy scene from History of the World Part One.
Then you watch another and say the same thing.

"Space Balls" is my favorite. It was the first of his movies that I watched as a kid, and as a big Star Wars and Scyfi fan, it just hits all of the right notes for me. Joan Rivers as a robot, John Candy and the President from Independence Day playing Han and Chewie squaring off against "Honey I shrunk the Vader". The jokes are simply outstanding.
Blazing Saddles is #2 for me despite it clearly being the superior film.

If I HAD to pick one, it's Blazing Saddles.
But his re-make of To Be or Not to Be is great and I wish it would come on tv more often.

It's hard for me to pick a favorite of Mel's movies, but I use more quotes from History of the World than probably any other movie. So I'll probably go with this.

Blazing Saddles for sure is my favorite of his. It is simply timeless and his breaking of the fourth wall (a staple of his) at the end of the movie is priceless.
Robin Hood Men in Tights is my second favorite. I could watch it and Blazing Saddles every week.
History of the World Part I is third. Despite a very loose plot and it basically being a bunch of sketches, it is absolutely hilarious. I could watch any given scene from this movie at any point in time and I will still laugh my arse off, even if I don't make it through the whole movie.

My favorite is Young Frankenstein. I also like Spaceballs.
On of my secret "movies everybody else in the world loves but you don't" movies is Blazing Saddles. For me, it has some funny moment but as a whole I just never found it to be as brilliant as pretty much everyone else seems to.
