I have a strange desire to catch a snook...is fishing for them any fun?....are they edible?...

Snook are some of the best eating fish out there. They are also my favorite type of fish to catch, as they put up a great fight. Their gills are razor sharp and if you give them half an inch of slack, they will cut your line like butter.
I have best luck finding them around structures (mangroves, docks, etc) where the current is ripping bait fish through at a pretty decent rate. Flip up into an overhanging mangrove or in the shadows of a dock at night, away from the lights is always ideal. Just be prepared for if one hits, cause they know where every barnacled piling and mangrove is located precisely, and they will snap you off just as quick that way.
Reeling them in though is the easy part. Actually getting a snook to bite is the most difficult thing. They might go 23+ straight hours without even sniffing your bait, I don't care what you're throwing at it. But then you might get a 20 minute window where they're really feeding and tearing up everything in sight.
Snook aren't like redfish where they'll just hit anything. Snook are extremely picky and they get spooked very easily. Slam your cooler lid too loud, stomp your foot just once in your boat, let your leader knot be too big, let your leader be frayed too much, and they're not gonna even think about hitting your line.
Easily the most frustrating and rewarding fish out there, imo. Well worth it when you finally land that slob.
