What are those bacon wrapped things?
Here in Gumpland, we call those ABTs (Atomic Buffalo Turds). Halve or cut the tops off of some jalapenos. Remove seeds if you like them tame. Fill with cream cheese/cheddar mix ( I like to add a little pulled pork too) wrap in bacon and put on the smoker for about an hour and a half. I could seriously eat them til I bust.

Couldn't see but the top picture last night or today. Wish I could.
I see them in other posts. Bacon is way too raw for my taste. Steak looks good, but a bit overdone for me. Nice going.

He got it up to 120 degrees in the initial stages. I don't know what temp he was looking for, but I would guess pulling it at 110 would come out to your liking...

He claims he only put it in for 10 minutes to get it to 120 at a mere 250 in the oven.
That looks like a decently thick steak, do you think it would get that high that fast?
That really isn't the reverse sear I think of.

Not from my experience. At 250, I would expect it to take 2-3 times that long...

I visited an HEB last time I was over there.
Place is awesome.

My bad on that info-I was a few beers by the time I posted it-it had to be about 1/2 hour. That fifty-fifty eclipse did a number on me-among others.
