A good homemade tartar sauce is where it's at with fried catfish. If the catfish is good and seasoned well, it won't need anything, but a good tartar sauce is hard to pass up for me.

That is gross.

It's funny I love seafood with cocktail, and cocktail is mostly ketchup, but damn if my extra horseradish and lemon juice don't make a difference!

I like a homemade tartar, but it's rich and I get sick of it quickly.

Actually, relevant to the thread: Catfish tossed in mustard and hot sauce before the breading is AWESOME.

John Besh has a great tartar sauce. I can't find the recipe anywhere, but I taped the show in which he made it and just made up my own. So damn good. I don't use but a wee bit on a piece of fish...just enough to give that complimentary flavor. Actually, I prefer hot fries with tartar sauce to ketchup.

Sometimes, I toss hot fried fish in a bowl with thin sliced onions. A bite of catfish with a thin sliced onion in the bite is a match made in heaven. A little pickle juice on that onion is good, too.

I used to love ketchup, but i find myself not even using it anymore, even for fries and such. I think it's more of a kiddie food.

Same. Just even a year or so ago, I was a ketchup freak. I grew up hating potatoes (I know, I'm a freak), but I've started loving them this past year.

Now a good crisp/seasoned potato is ruined with ketchup IMO.

I'd pick ketchup even though I probably use mustard 10 times more.

I think that's the trashy way to prep catfish. Well, I guess itself catfish is probably trashy.

...I love it prepped that way.

Fried fish, fries and fried deer steak. About my only uses for it. But for those three it's damn near a necessity.

I need ketchup for my meatloaf! For other things, I could improvise, I guess. I don't eat fried chicken anymore, but I do love ketchup with fried chicken.

Sausage needs mustard, there is no improvisation for that.

Luckily, I don't really have to make this choice.

Mustard by far.

So many ways to make a great mustard. Ketchup is pretty much the same.
