If you read Joe Bastianich's book Restaurant Man, you will get a bit of insight on Mario as they are partners. It's a good read if not a little self serving.

I'd never pick a "best" because it's way to subjective. I'd say Mario is a very good chef.

Haven't tried them all, but K-Paul's is my favorite thus far. Better than August; much better than Commander's; much, much better than Cochon. I love Galatoire's overall nearly as much as K-Paul's; but the latter is more consistent and more flavorful. In fact K-Paul's delivers more flavor more consistently than any restaurant I've ever been.

It is a mite rich, however.

I haven't been to August but have no idea how one can say Galatoire's is much better than Commander's & Cochon.
