I have been waffling between doing a 100% brett black ipa-ish or a 100% brett baltic porter next. The baltic porter recipes that I'm coming across call for some malts that I'm not familiar with such as Belgian Munich and Belgian Special B.

What can I expect out of those? I am leaning towards doing at least a part of this brew with blackberries and maybe even the whole batch. Would those malts work with blackberries or would they clash?

I've used little amounts of special B in biere de gardes before. Fruit sort of sweetness. Kind of weird. Think fruitiness of a dubbel. Never used Belgian Munich, but what I just read about it sounds interesting.

After topping off the barrel for the past 24 hours, most of the leaking has stopped. Just poured in 5 gallons of 180 degree water to sanitize and try and get the wood just a touch more swollen to close the last little cracks. Think I might leave this water in there until tomorrow, dump, then nuke it with campden for a day or two, then put a handle or two of whiskey in there for long term storage.

The water I poured out earlier had a slight toasted oak aroma. I'm wondering how much whiskey flavor is actually left in it at this point. I'm really curious to know what would happen if I got a case of whole foods chardonnay and dumped it in there. I like the idea of wine barrel aging more than bourbon barrel aging. I shall debate this with myself and do a little research.

Yeah, I'm really liking what the net has to say about it. It looks like I will have to order it, since the local place doesn't carry it. I've never order milled grains online. Northernbrewer has Belgian Munich, anyone used them for their grains?

Never had a problem from them. Only positive experiences. One time I received a dented better bottle from them. They shipped me a replacement at no cost and let me keep the dented one. Still use the dented one 4 years later.

Brewed a big English Barley Wine yesterday for Learn to Homebrew Day. Pretty decent turnout at the brewday, not many who needed to Learn How to Brew but what can you do. Ended up with an OG of 1104, so should be a decent beer. Fermenting hard already, pitched a quart jar of yeast cake of SO4 from the mild that I brewed a week ago. Pretty excited about how this will turn out:
21 lbs Maris Otter
2 lbs Munich
1 lb C60L
56 g Horizon 60
10 g Fuggle 20
10 g EKG 20
10 g Centennial 0
10 g Fuggle 0
10 g EKG 0
28 g EKG Dry
28 g Fuggle Dry

Not completely sure about the 2 ounces of Dry hop but that will come soon enough.

My first guess is No. But I'm sure they're designed to hold pressure so maybe...?

Pretty damn easy to recycle used beer bottles though.

I had my friends save some but I forgot to tell them no twist off bottles. So I only have half the bottles I need. I am going to give it a shot and see what happens.

I'm going to strongly advise against using those jars. Those jars are designed for vacuums and not pressure. Your beer is plenty fine waiting for a little bit until you can get some more bottles.

Don't do this unless you want to clean up a bunch of exploded beer. Friend of mine said he did this once and ended up with a closet soaked in beer.

Good info starts around the 1:45 mark. Very cool recipe talk. No boil no hops.

lol. No problem. I know how some people don't care to listen to the banter.

Turnaround time on that Berliner was just 10-14 days. Seemed cool as shite to me.

If you watched the recent episode of brew dogs they just added 6 hours to their brewday for a berliner weise, regular fermentation. Odd way to acidity the wort

Yeah. I didn't pay attention to the process on that episode. Wasn't nearly as interesting as the Denver or Seattle episode to me.

I only find like half of the show interesting/entertaining. The craft beer virgin and tasting at the end are pretty dull.

How did the event go this weekend?
