Cajun Baked Chicken & Waffles

Alright this may not look all that interesting but it was a pretty darn tasty meal. My wife baked chicken breasts seasoned with Cajun Seasoning. I deboned it put it on top of jalapeno cornbread waffles along with crawfish cornbread dressing and drizzled the chicken and dressing with Bacon Syrup. Add a baked sweet potato on the side and Wow! this was a flavor explosion filled meal.

Tasty Looking.

I have had a serious wanting for some waffles lately. Needs to be a weekend thing. I guess I could (should) do them for dinner, couldn't (shouldn't) I?

Ya got that recipe for crawfish dressing?

Have you given us the recipe for the jalapeno cornbread waffles yet?

This made me think of how good smothered chicken over that waffle would be. I'm a limited chicken lover, but that sounds good to me.

Dang it. Just when I get over my cornbread addiction you and MD keep pulling me back down into the depths of cornbread hell. Them waffles sure look tasty Clark.

Here ya go!

Crawfish Cornbread Dressing


2 Cups chopped celery
1 Large onion chopped
Chicken broth or shrimp stock (about 1 quart)
1 bunch green onions chopped
6 Cups cornbread crumble (box or homemade doesn't matter)
about 5 cups of diced french bread
2 lbs peeled crawfish with the fat(if large you can dice them but not too fine)If you want more crawfish add more
1 stick melted butter

Cook celery and onion in broth until tender. Add the green onions. Pour celery and onion mixture into a large mixing bowl. Gradually add the cornbread, french bread and crawfish alternately. Season with salt(careful with the salt), black pepper and a little cayenne pepper. When all is mixed well melted butter and stock or broth to desired moistness.
Can be used as a stuffing for chicken, duck, turkey, thick double cut pork chops or bake in a casserole dish at 325 degrees for 20-30 minutes. When baked as a casserole I usually add a few pats of butter on top and let the top get a little browned. Be careful not to over bake and dry out.

Here it is again.

Nate's Cornbread Waffles


1 1/2 cups corn meal
1 1/2 cups flour(all purpose)
2 Tbsp. sugar
1 Tbsp. baking powder
2 tsp. cumin
1/2 tsp baking soda
1 tsp salt
Mix all dry ingredients in a large mixing bowl.

Add following wet ingredients and mix well with a spatula.

1/2 cup buttermilk
1 1/2 cups cold water
1/2 cup vegetable or canola oil

Add the rest of these ingredients until incorporated

1 14.75 oz can of cream style corn
1/2 - 3/4 cup small diced onions
2 med small diced jalapeno pepper (you can add slices of jalapeno throughout waffles as you pour mixture into waffle maker)
1 1/2 -2 cups large shred colby and jack cheeses

Heat waffle maker and when ready spray with baking/cooking spray and add enough mixture to fill waffle maker, close and bake as recommended by manufacturer.

Thanks. Found the waffles in the recipe thread just now, but I added your crawfish dressing there. I didn't see that one.

I don't get the Chicken & Waffles thing. Waffles should only have pecans in them and topped with butter & syrup. Waffle House.

This wasn't your regular waffle. It was jalapeno cornbread made as a waffle to give a crispier texture and contrast the crawfish dressing. Syrup is BACON syrup. Don't knock til you try it!
