Brats...Boiling vs Grilling

So we do a shop lunch almost every Thursday. Last week, the guy doing it pours $20 worth of Sam Adams into a big pot and boils the brats, then goes outside and grills them.
I've never done this. I do either or. Usually if I am doing brats, I pour about two beers into a pot with some onion and add a little water.
I honestly couldn't taste anything special about them later.

I boil them in beer, onions, and caraway seeds until cooked through , then grill them.

This here. Or roll em around in a hot black skillet for a little while. It crisps them up pretty good. Then throw the bastad on a bun with some Gueydan's mustard, the beer onions, and some sauerkraut. Eat it and call it good..

I learned the technique from my mom years ago. The roasting part can be done on the stove top in a dry pan. The exterior will start to blister a and gain some brownish hue to the eyes a bit when they are done.

It depends on the sausages. If you're doing weissewurst, only boil them and serve them with a sweet mustard. German breakfast of champions. I love it.
