Frog leg recipes

I have normally fried them, rolled in hot sauce, salt and peppered then rolled in Zatarains fish fry and fried.
I have grilled them a few times with garlic and butter basted on them.
Any recipes y'all have that will beat these? I have been hearing a few frogs in the evenings at the pond across the road, and I am getting ready to gig a few before too long.

I haven't been gigging in years. My two ways are what you listed. Should be able to poach them in white wine and do a Beurre Bannc. Would it be any better? I have no idea, because I like the ways you mentioned.
Wonder if anyone ever BBQed them - with sauce - like chicken legs? They would cook very quickly and then get tough just as quickly.

I've deboned the larger ones and stuffed with a seafood stuffing. Smaller ones I put the stuffing between the legs, wrap in bacon and bake. Baste them often. Grilled and served over angel hair with some garlic, herbs and olive oil doesn't suck either.

8 Frog Legs
2 Cups Buttermilk
2 Cups Flour
4 Eggs (beaten)
12 oz Cayenne Pepper Sauce
1 Stick Butter (melted)
1 Tablespoon Honey
1 Teaspoon Cumin
1 Clove Garlic
Habanero (optional)
Directions
1A day in advance, prep the legs (cut apart if they come with both legs attached, defrost if frozen) and marinade in buttermilk, salt, and pepper overnight.
2In a blender, mix the cayenne sauce, butter, honey, cumin, garlic and optional habanero until fully mixed and smooth.
3In a sturdy pot, bring your oil to 350 degrees (use a deep fry thermometer).
4One by one, dip your frog legs into the flour first, followed by the egg, then in the flour one more time. Shake off excess flour and fry the wings about 6 minutes until golden and crisp, and fully cooked on the inside.
5Toss to coat in the sauce and serve.

No frog regulations in GA! If it is warm enough for them to be out, get all you want. The only season on frogs here is salt and pepper!

dang, i used to love to gig when it was legal,,,, when i got older,, grabbing wasn't as fun... I wonder why?

Gigging is the main way I do it, but I have also used .22 shorts, a pellet rifle, grabbed by hand, and caught in minnow nets!

Old Geauxt, I think you've been out of the game too long. Gigging is legal again in La. You can catch them any way you want other than with a gunshot.
