Lemon Thyme and Lemon Balm Uses

Yard guy keeps planting lemon thyme instead of English, though he did put some English in this year. I have way more lemon thyme, though. Smells great, tastes great, but I've never used it. I imagine it would be great with fish.
Anyone use lemon thyme regularly and, if so, for what?
ETA: Added lemon balm to the subject since a few of us have questions about that as well.

I take about 1 tbsp, chop it, and sprinkle on top of salads. Nice little taste spike.

That's a nice idea. I figured it would go well in vinaigrettes, also. Do you use it in any dish in which you would use lemon and thyme?

I use it in my seafood pasta dishes, I toss it and the basil with the hot pasta. Good on grilled chicken and fish also.

I've also added it to honey, olive oil and basil for a nice basting liquid for grilled chicken. Also used it to mix in cous cous (after its cooked).

All good suggestions.
I have lemon balm as well, but I've only used it in tea, so far.

In the same vein, any used for lemon balm? That stuff started running wild in the herb garden.
The mint is looking at it as if it is out of control.

lemon balm?
I just posted that while you were posting. Mine has never run wild like mint, though. It's in small patches and dies back in the winter. It's coming back up now and I have some new plants the yard guy put in. I keep telling him the stuff comes back and I don't need it, but he puts it in anyway.

The wife made lemon balm and eucalyptus soap about a year ago from the stuff in the backyard. It will remove some crawfish smell that is one thing.

I don't particularly like lemon balm in foods, though it makes a nice accent flavor in a gelato/sorbet. It's better as a bath herb; toss big handfuls of it under hot running water, let it steep for a bit before bathing.

I wear disposable surgical gloves when I eat crawfish. Keeps me from burning the hell out of my eyes and my hands don't get all dry and nasty. Saves the manicure, too.

I had a plant of it a few years back. You're right, it's awesome with fish. Also it works well with any light butter/lemon sauces.

Oh lawd!
I think the smell is the punishment you take for really good crawfish.

I guess they also help if you get stuck having to do somebody's roadside examination.
Also, always wondered what was the deal with those handcuffs some folks hang from their rearview mirror.

With my way, there is no punishment! I haven't eaten crawfish barehanded in years and people always want my gloves, so I come prepared. They're tight on the hands, so they don't interfere with speed peeling or getting the fat out. Rip 'em off and I'm all done.
I used this outfit for crawfish boiling a lot and they added a glove dispenser after a few times. Their customers loved it. Well, at least the woman and children. He men are such wusses that they won't use them. Sheer stupidity in my opinion especially when they complain about burning issues in the bathroom ad nauseum.
