Breakfast casserole, Baptist food with pix

I like to make a breakfast casserole from time to time. This is a modified recipe from a church cookbook. This dish is always served at prayer breakfasts around here in some version or another.

I made this tonight to take to work tomorrow. Bastards better give me a raise.

You need:

A loaf of Capt. John Derst's bread (I think Bunny bread is the choice in LA)

A dozen eggs

2lbs ground sausage (I used 1lb deer, 1lb pork)

1 small onion

2 sweet bell peppers

1 jalapeno pepper (I left this out, due to the fact not everyone at work likes them )

Block of extra sharp cheddar

Block of pepper jack

Butter

First off, get the sausage browing

Then, layer the bottom of the dish with bread.

Cover it well with the grated cheese

Once the sausage is done, drain it well and set aside. Add some butter to the pan with the sausage gratin. Sautee the veggies until tender

Spread the sausage over the bread and cheese.

Spread out the veggies over the meat. I add more cheese here, but it didn't mkae the pic

Layer more bread over the top. Scramble the eggs well and pour evenly over the top.

Cover in foil, and let set up in the fridge overnight. In the morning, heat the oven to 350. Bake for about 30-45 minutes or until hot through.

Pretty good stuff. I like jalapenos in this, but like I said, a few folks at work don't like them. This is easy to do and easy to modify.

This morning we made hash browns with onions and peppers, put crumbled bacon, scrambled eggs and shredded cheese on top. Don't know if it was really a casserole but it was yummy!

I prefer breakfast casseroles with no bread. Made some on Saturday.

Bacon
Sausage
Cheese
Eggs
Spinach

Cook bacon, cook sausage.
Spread bacon grease in casserole dish.
Spread sausage as bottom layer.
Add half of cheese on top.
Cook spinach in sausage grease.
Add spinach on top of cheese.
Cut up bacon and add on top of spinach.
Pour dozen scrambled eggs on top.
Use utensil to lightly press and ensure egg touches everything.
Bake on 350 for about 30 minutes.

Sounds good and looks good, so far. Might be a tad rare for my tastes.

Salt and pepper on the veggies and a little pepper on the sausage.

We do the same thing but the buttered bread goes in the bottom of the pan and we cut it into cubes
