Need some quick, cheap, and easy chicken recipes

That can be mass produced.
I eat a lb of chicken a day. I do 8 ounces of something similar to chicken parm and potatoes.
Need something else for the other 8 ounces.
Any ideas?
eta: I also cook all of my meals 5 days in advance. So it has to be something that stores well, too.

If you eat a lb of chicken per day I have a recipe. One bullet, one gun, pull trigger one time, really fast food.

1) Pound into medallions. Dip in egg/milk. Fry.
2) Brine in pickle juice for 30 minutes or so. Bread and fry. Put on a buttered bun. Now you're eating Chick-Fil-A but much better.
3) Sauttee chicken with butter and mushrooms. Add more butter and flour until slightly thickened. Add white wine and chicken stock. Mix with linguine and parmesan cheese. Bake at 400. Boom. chicken tetrazinni.
4) Chicken sauce piquant. Trinity + roux + chicken + chicken stock + spices. Serve over rice.
5) Chicken salad. Food processor with onions, celery, mayo, and relish. Can dress up as much as you want (grapes, pecans, etc...)
6) Brine the shite out of it and roast it

That sounds fire. Do you have a recipe for 2 1/2 lbs of chicken?
