I ate at Revolution in New Orleans last weekend and was told to try the marrow. I have never eaten marrow or osso buco before so i figured i would give it a try. Had to be the absolute worst thing I have ever tasted. It was like eating an increadibly rich piece of fat. Has to be the most unhealthy dish I have ever tried and I honestly feel sick just discussing it. I must also add that these were long slices of bone split down the middle so it was a great deal more marrow to eat thn traditional osso bucco. Do any of you honestly enjoy marrow?

It's one of the best parts of the animal. Very rich. Goes great with a nice white wine.

It's ok. I tried some in Vegas and like you said it's like eating an incredibly rich piece of fat. Maybe if I put it on a cracker or piece of bread it'll be better.

it can be really good but also incredibly rich. had some last month at 5 & 10, as a starter. really great. moderation is the key with bone marrow, i find.

Sure. That one piece out of a round steak mixed with rice and gravy is outstanding!

Yes, but it also depends on how it's prepared. The marrow bones with oxtail marmalade and toast at Blue Ribbon in NYC is one of the best starters I've ever had. The marrow in that dish has a consistency like butter and you spread it on toast. It's fantastic. The red wine braised octopus with fusilli and bone marrow at Marea is also a fantastic dish that is really elevated by the richness of the marrow. So yeah, I enjoy marrow. A lot.

That is exactly how this was served. I am certain those who enjoy marrow would have loved the dish but it was not my cup of tea.

Love marrow. Bouligny Tavern does it well.

Depends, i've had some good and some bad. I agree about Bouligny Tavern having excellent marrow.

I've loved it since I was a kid and first tried it in my grandmother's round steak gravy.

I ALWAYS suck the marrow out of my ham hock after it has simmered in my red beans all day. Of course that hockl is usually from a glazed ham I have baked for a couple hours so yes, the Pork marrow out of my red beans is excellent.

One of my top-3 meals of my life was the osso buco at this off-the-beaten-path homestyle restaurant in Milan. That bone was heavenly. My only regret is that no osso buco I've had since can even compare.

I don't dislike it, but it is way overrated.
