Crock Pot Jambalaya

I posted a thread looking for ideas for bone-in, skinless chick thighs yesterday. Turned out I didn't have much time to cook and would have about a 45 minute window around 3pm to get something together.

Decided to throw the chicken into the crockpot with an onion, a red bell pepper, and some celery. Added two jalapenos, garlic, and typical jambalaya spices. Cut up some andouille and topped it all off with a cup and a half of chicken broth. Let it cook on high for three to four hours. Added shrimp towards the end.

Used the broth from the crockpot to cook some bags of Success rice. Then put the rice into the crockpot and mixed it all together.

It was fricking awful, but I don't think West Africans would complain about it.

Was it soupy? Did you finish the dish in a pot or the crock pot?

It actually wasn't soupy at all. A bit wet for my taste.

Finished it in the crock pot.
