Carnitas in the Crock Pot Question

I put a 4 pound bone-in Boston Butt in the crock pot with 1/2 cup of orange juice, the juice of one lime, 1 cup of salsa, brown sugar, and some spices.

It's been in there for 4 and a half hours on low, and it seems to be getting tougher rather than shreddable. Does it just need to go for a lot longer, or should I add more liquid?

Still a good bit. It's not dry by any means.

About an hour ago, I scored the fat side of the butt and turned it over. I might turn it again.

We did one a couple weeks ago and let it ride for about 7 or 8 hours and came out perfect. Don't remember the recipe but we did add OJ and some other liquid like you did.

Do you have a meat thermometer? It should get more tender once the internal temp gets above 170. Once you hit 195, it should shred nicely.

I turned it up to high right after I posted this thread. Hopefully that helps it get ready in time for dinner.

Low for like 7-8 hours should be plenty enough as long as you don't keep taking the lid off

Update -

Came out INCREDIBLE. I guess it could have been a bit more tender, but it shredded nicely. More like thick shreds, but it was great.

Finished the meat by spreading it out on a baking sheet, pouring some leftover braising liquid over it, and then baking it for 10 minutes at 450.

Slow cooked some onions and peppers and garlic on the stove and made the best tacos I've ever made.

I used a 4lb boston butt.

It made six meals if you eat conservatively. I added half an avocado for each serving.

As for cost? It was $12 for the butt. I had orange juice and the spices on hand. $2 for Don Pedro tacos. $1.50 each avocado. $1.50 for the onion and peppers.

So I'd say $20 at the most for six meals. Not bad for good eatin'.

It could go on low for about 7-8 hours. Keep in mind that every time you open the crock pot, it takes 30 minutes to get up to temperature. ONce you put that bad boy in there, there's no reason to open it. Leave it alone.

$3 a lb. for boston butt is outrageous. Keep a look out for sales. You can catch it for as low as $1.25 a lb.
