Bone In Pork Sirloin Roast in a Crock Pot

I've never cooked this cut before, but I did over the weekend and I like it a lot. Not as fatty as a butt or shoulder or it didn't appear to be to me. There was plenty of fat, but more "solid meat" parts than the other cuts.

I trimmed the thick piece of fat from the top and dusted it in seasoned flour before browning it in a little canola oil. Put the roast in the crock pot. Added more flour and made a roux in which I cooked onions, garlic and bell pepper. Added a little pork stock I made from a pork base I order online. Eventually added about a cup and half of that stock and added that to the crock pot. Cooked it on low overnight. It probably cooked about 10 hours before I fooled with it. Took the oil from the roast off the gravy. There wasn't that much surprisingly.

Turned out very well. Gravy was good over rice.

My preferred cut for pork in the crock pot. Butts/ shoulders are ok but too greasy imo.

It weighed about 4.8 or so lbs, I believe. The bone wasn't all that heavy. I probably took at least 8 oz of fat off. The meat was quite tasty. It was sort of a mix of what I call white and dark meat pork. Some parts were drier than others, but not dry tasting if that makes sense to you.
