Does anyone have a good veggie curry recipe?

I had a killer vegan curry a few nights ago and I would love to make something like it...
Doesn't have to be vegan, obviously, but I'm extremely picky about leftover meat (hate leftover poultry, for example), so I'd like to do it veggie since I'll probably have a lot of leftovers.

Are we talking Indian curry or Thai curry? Aloo mattar (potatoes and peas) is great...I linked a recipe here the other day on the frozen green peas thread.
