I said in my post I don't mind walking My issue is not the walking. it's the idiot drivers who can't maneuver their vehicles in Perkins Rowe. It's never an enjoyable drive.

Seriously? It's at the front with easy access and the parking lot is always half empty. If that takes motivation, then I don't know how you get out of bed in the morning. I used to park in the Fresh Market lot when I'd go to the movies because it was so easy. You jump down a flight of stairs and walk around the corner and you're there.

Not walking.. driving. I hate Bluebonnet/Perkins in general though. I worked at the mall after the hurricane and sat on Bluebonnet 1.5 hours every afternoon so I'm scarred for life. I'd get out of class at 2 and not be able to make it into work for 4.

Regardless, not the point at hand here! Velveeta, people!

That place is in a bad spot in Perkins Rowe. At least Kona Grill and California Pizza kitchen face the main drag. And I wonder how a place that basically becomes a bar with live music until 2 am will work inside an area with residences. I can see a lot of tenants getting pissed about noise, people leaving beer bottles out, drunks, etc

Yeah, I got that. Jones' argument didn't address transportation engineering problems within the city network, but rather general incompetence regarding drivers and pedestrians within the boundaries of Perkins Rowe. I get that Bluebonnet and Perkins are nightmares.

As for the velveeta, you've probably had it more times than you'd care to know.

And I work on Bluebonnet and get lunch from Zoe's and Fresh Market a couple of times a week. Parking in the area with Zoe's and Barnes and Nobles sucks donkey arse. Now Fresh Market always has a ton of spots.

How can a manager have someone on their feet for 8 consecutive hours with no break?

It's called work. Walking back and forth from the kitchen to tables isn't difficult.

I just checked out this place's facebook. You are surprised they use shitty cheese in their queso when they have pictures like this on their facebook?

The 2nd girl in that photo is the girl who made the "Girlfriend #2" video online bragging about sleeping with the entire LSU baseball team when they have girlfriends.

While this has nothing to do with my experience there and I couldn't care less, no other restaurant in the entire city will make you work 8 hours without a break. So why would anyone choose to work at one that does?

I'm not sure who's doing better. Her working there or the other taking her clothes off for any photographer in L.A.

It's not bad at all. There's bitching overload about this place. It was the first week they were open. Give them slack.

I stated in the OP that i can easily look past new restaurant issues. They brought us someone else's food.. No biggie.. The table numbers are probably messed up. They were nervous and didn't know much about the menu.. Can look past that.

Velveeta nachos and paragraph menu items are not a result of being new and worth noting. That being said, maybe mentioning it can get it worked out early on :) People I know well are affiliated with the owners and bartenders in some way or another so it's certainly a place I want to do well. I was actually pumped to be there. Even debated saying anything about it. But I can either ignore threads about it and pretend I've never been.. Or say "I went and had nachos. They existed." .. Not mentioning the seemingly velveeta topping

It's my understanding that a few managers came from other BR restaurants to the Lava Cantina to manage. It's also my understanding that these managers weren't very good at their previous locations...this could be a small part of the problem

I've heard the owner is a really nice guy and who knows.. They may not need the best quality of food around to thrive. I hear the margs are great. Between really good guac and salsa, they might just be looking to be a place for people to hang out and munch on chips and drink.

BR has supported much worse and I applaud their effort to make a local joint unlike any other in the city.

That queso might have just very very closely resembled velveeta ( ) .. I just simply think that's an easy fix that will please more folks than those who know the employees or those who don't care what they eat. A regular tex mex queso is just doctored up melted white American/cheddar. Simple and good.
Keeping the style and changing the menu to be more list style would help too.

I also checked out their Facebook page and they said live music will not start until cinco de mayo because right now they're focusing on tweaking recipes and perfecting service. If true, thumbs up to that.

Considering you're an expert on Nachos you do realize that the queso cheese that most all Mexican restaurants serve is called Golden Velvet and it's made by Land O Lakes and yes it is a cheaper knock off of Velveeta and it comes in 30 lb blocks. If they melted real cheese for queso dips it would separate and not have the smooth consistency that you queso eaters have come to appreciate.

Having worked in restaurants for a while, I know exactly what cheese you're talking about and no Mexican joint I frequent uses it as queso. I certainly believe you that some places do.. but not places people would consider quality food. In fact, I usually only ever receive white queso at the Mexican joints I enjoy.

Fwiw, I do recognize that white American (also by land o lakes) and velveeta isn't too far different but this is straight up like walking to your microwave and melting velveeta.
