I searched for a previous thread on this but didn't see any. Thinking about doing this on Sunday. I dont have a plate setter however. Anyone have any good recipes without using a platesetter? Thanks!

My folks do one once a month or so. I've always thought the biggest thing is the brine. Set it up tomorrow, let it soak for 24 hours, and set it at 220*.
I've never had one that came out wrong. The bones are great for stock. Don't toss them.

In my primo, I just use a aluminum pan lined with foil as a placesetter. I think that's the same as d-plates in the primo.
Smoke at 225-250. Really no way to mess it up IMO. I use a Maverick to check internal temp though.
