Getting ready to open a coffee shop..ideas?

We are going with local sourced coffee for the most part and focusing of course on espresso-based drinks since that's where all your margin is.
thinking of doing a few deli items..but not too many.
want to go with more specialty coffee..having du monde/chicory as an option every day is a distinct possibility (we are in nashville, not LA so its more of a treat for people here to get dumonde coffee)
also using the du monde to offer 'americanized' vietnamese iced coffee (w/ the sweetened condensed milk) and REAL cuban coladas made with brown sugar and pilon espresso.
we have a source here in town for those yummy vietnamese poboys..the banh mi? we could stack the cooler with those or learn how to make them ourselves..its mainly the vietnamese pork that makes them so tasty.
we're just jotting ideas down on the back of a napkin right now and given my humble louisiana roots, i'd love any ideas to help tie the place to la..something a little more authentic than selling zapps at the counter.
thoughts? we have found at least once space and are in the process of negotiating with the developer..we have to have a grea$e trap..UGH..davidson county codes suck because of disposing of a milk-based product requires a grease trap..total scam IMO.

You could try and sell boudin and hard boiled eggs as a breakfast.

plenty plenty plenty of electrical outlets and wifi access (even if small fee required)
so annoying to go into coffee shop to do some work for a while and they only have 4 outlets

If you don't have craft coffee it will fail.

yep. we're definitely going for atmosphere. wifi and power is a must..although all the people these days seems to be on ipads so its not as much of a big deal as it once was with everyone on laptops needing power.

do you mean like local/sourced or organic?
we went on an international coffee hunt and brought different kinds home to sample a few weeks back and nothing jumped out at us.
i'd love more suggestions on 'boutique' coffees you have had before that you loved.
we're pushing hard on the quality aspect..there isn't another local coffee shop in our area right now..but there is a starbucks.

thanks. the li'l lady and i both love us some coffee so its something we both are very excited about.
if it fails it fails..but its just money. you can always make more.

if you go the wifi route, make sure you have someone that knows what they are doing set up a business class router with QOS (quality of service) so that you can assign a certain amount of bandwidth to each device. You can also throttle bandwidth that is going to the open wifi for certain site or types of media
Then take the back end office internet and split it from the open wifi.
I remember Charlies in BR used to have a limit of about 30 to 40 users and you were screwed until someone disconnected.

If you're selling the chicory and/or cafe au lait...gotta add beignets to the menu. They're so easy and cheap to make, and I can't find them in Tennessee outside my own kitchen. Even if it's just a limited morning thing or weekends, could help you develop a reputation. And...thinking sales/brand/media-wise...could make for a really cool morning show cooking segment. Drop off a fresh, hot box of those suckers to the anchors at one of the stations with a news release about your shop. Morning show anchors love that stuff. To get ON the show you have to get to a producer. I can get you names, if you want.
I would also come up with some solid lunch/snack options. I love a good smoothie in the afternoons, but regular smoothie shops are overrun with after school kids and makes it hard to work. Or if you're looking for light lunch or afternoon snack and the massive blueberry muffin is not appetizing at 3 p.m.

there is a ton more.
The Cisco routers you deal with now have tons of options.
Just thinking out loud but it would be pretty cool, if you have regulars, to use their MAC address (unique to machines i believe) to signify which devices were theres. Then you let them pay a small amount/register for free and it would let you see which addresses used what amount of bandwidth and you could let your better customers enjoy more bandwidth.

that's surprising considering how up and coming Nashville is. good luck to y'all I know there's probably demand in the marketplace for a mom & pop coffee shop. and right now is the time to cash in on the local small business movement before every city is over saturated.
