I like to cook a lot and then freeze it in smaller servings for later. I do this with sauce piquant, gumbo, spaghetti, etc.
What are some things that you guys cook and freeze for later?

Chili.
Anything with a vacuum. I come from a big family and only know how to cook big. There is nothing better than cutting up and cooking those aromatics. browning and cooking meat all day.
But I'll freeze and reheat all day.

We brown ground meat with salt and pepper and freeze it in 1 and 2 lb. bags.

Definitely lasagna as when I make some the pan weighs about ten lbs.

So, you have to wait several hours to defrost something, but can save yourself about 5-10 minutes on a recipe after that?
I don't see how this is a convenience.

Red and white beans, veg soup, seafood stuffing.

I buy 15-20 lbs at a time (5 kids). If it's cooked and frozen it takes about 5 minutes to thaw in a hot pan. Maybe I don't understand your question.

Stuffed eggplant, mirliton and bell pepper freeze well.
Vegetable soup, tortilla soup sans the tortillas, tamales...
I freeze a lot of pureed soup bases without the milk or cream which I usually add just before serving.

Red beans
Chili
Spaghetti sauce
Soups
Stock
When I get ground deer from the processor, I will often pat out about 20 hamburger patties, wrap them in wax paper, and put in gallon ziplocs to take out when the burger craving hits. I don't always do this, but it makes things easy.

Gumbo--unless I have a few quarts of chix gumbo in the freezer, I feel poverty stricken.

lentil soup, chili, pancakes and muffins.
eta - the latter 2 freeze and defrost surprisingly well.
