A dish you first encountered at a pot luck dinner that became a staple for you?

not so much a dish persay.....but, i once went eat steaks at a buddy's house and he sliced his potatoes and placed them in a rice cooker with about 6oz of water. He added seasoning, butter, and chives, and pressed "cook". when it "dinged", they were perfect.

so, everytime i grill steaks for me and my wife, i simply let the rice cooker do the taters and i drink by the pit.

Sounds like a good idea. I guess you and I might find other secrets to our cooking appliances if we read the manuals that come with them.

Actually, it was at a potluck brunch, and the dish is a grits casserole, with egg whites & white cheddar. I make it every time family visits, and many times when I have breakfast for supper.

not really a pot luck but a quick and somewhat healthy vegetable side I learned from a girl I dated.


1 can french cut green beans
garlic powder
salt
pepper
1 cube beef bouillon
olive oil

toss it all in a sauce pot and simmer

easy and a good change of pace

Arroz Imperial.

Had it at a wake for an old Cuban man where everyone brought a dish. Essentially its a rice casserole.

Roast pork
Sofrito (think the Trinity without the celery and + white wine, tomatoes and olives)
Cooked white rice
Cuban version of Beurr Blanc sauce
Queso Fresco in the casserole and Cheddar to melt on top at the end.
Of course whatever seasonings you prefer. Us? salt, garlic and cayenne.

Simple as hell. We eat the leftovers for breakfast the next day on some toasted Cuban bread or in a tortilla.

stuffed bell pepper cassarole, everything you like about traditional stuffed bell peppers but in a casserole.

Stuffed Bell Pepper Casserole

Ingredients

2 pounds ground turkey
2 cans petite mild rotel
4 large bell peppers, diced
2 onions, diced
2 cloves of garlic, minced
2 Tsp dried basil
1 tsp dried oregano
1 tsp salt
1 tablespoon worcester sauce
pepper
1 cup quinoa
2 cups HOT Beef broth
2 cups shredded cheese (mozzerella)

Instructions
1.Preheat the oven to 350 degrees.
2.Stovetop, brown ground Turkey, breaking into small pieces while it cooks.
3.In a 9×13 inch casserole dish, combine browned ground meat, tomatoes, diced vegetables, all seasonings, quinoa, worcester sauce and hot broth. Stir to combine.
4.Bake, tightly covered, in the oven for 1 hour. Remove cover and add cheese. Bake for additional 15 minutes or until cheese is melted.
5.Remove from oven, cover, and let stand for 15 minutes or until quinoa has absorbed all broth.
