I worked at Tony's when i first came to Baton Rouge from New Orleans.

They don't steam them. They use the 2 pot method.

Finally the truth revealed! Thanks man. Tony's boils my favorite retail crawfish. How to they keep the fat intact? Any secrets you can divulge regarding their process would be appreciated.
