New to this thread too. But the peanut butter seems a bit unnecessary, unless you like what it adds.
You already have your roux made, is the PB to thicken it? If so, why don't you just add a bit more flower, or add more oil and flower to make a bigger roux?
PB in a gumbo just seems innately wrong. But to each his own.

I feel like this is the greatest troll of all time OR if this is really a thing, it got started by someone who doesn't know shite about gumbo and thought peanut butter roux actually referred to peanut butter and not the coloring. It just so happens that it didn't ruin the gumbo so it got passed down and now people think this is a real thing with a real purpose. I just refuse to believe it.
