Best way to shuck oysters

Best I've seen is kind of a drill press style. Not rotating, but you can use a handle for leverage as you press the blade into the shell.

How many are you talking about? What might be good for a couple of dozen might not be good for 2 sacks...

I like to use a lead keeper as well. Those things can start sliding around, and the next thing you know you got a rusty oyster knife stuck in your hand.

OP: Rap the oyster good with the knife handle, or knock him on the lead, to stun him, and then get the blade in near the hinge and twist. He's still alive and holding on tight. Once you got the advantage on him, slide that knife in and along both shell halves cutting him loose.

The real tough ones you can just throw on the coals from a fire and just when they pop open they're easy to open and steamed to perfection. Cut them out and run them through lemon butter. they have a nice smokey flavor. Don't let them go too long on the coals or they'll get rubbery.

I like to go to Schaefers in Bucktown and get a quarter sack. Today would be a good day to shuck a few out on on the dock.


This is all you need to open a few dozen.

Find the nook on the oyster. Put end of oyster knife in the nook and rotate your hand like you were revving up a motorcycle. Make sure the oyster is laying down. Do not try and force knife in while using your other hand to hold the oyster. If this doesn't work put the oyster on end with the nook end up. Hold oyster and knife with one hand and gentle tap top of knife with hammer. Gloves are recommended for rookies. I'm jealous.

i use welding or leather glove on left hand, dexter-russel oyster knife in right. Pry hinge to break it, slide knife in to cut muscle from top, then cut muscle off bottom.

If you can get your hands on some of the galvanized grating used for landings in the plants, you are set. Put across a couple of sawhorses and go to town. It keeps the water and other liquids from creating a wet, slippery working surface.

Oh, and invite me to come help-I generally only eat a couple of dozen while I'm shucking.
