Ate at Sammy's on Highland this evening. Ordered the crab bisque. Added a little lemon juice and a few drops of Tobasco and was very impressed. Great flavor balance and LOTS of lump crab meat. Would order it again without hesitation.

Yeah, about about that great flavor balance? Except the lack of acid and need for pepper?

whenever I serve bisque at home, I always provide lemon wedges and a variet of pepper sauces so guests can finish it to their liking...I do the same when I order it at a restaurant. So, yes, I thought the flavor balance was great and only needed my usual touches after serving. I am a bit of a seafood bisque snob and I thought that Sammy's version last night was at the head of the class.
