Been frying turkeys for a few years now, this year I decided to do a smoked turkey too. Any hints or tricks? Thanks.

Everyone told me to brine mine, so that's what I'm doing.

Rub with olive oil, season with Tony's, Cavender's and paprika, inside and out. Stuff with a piece each of apple, onion, celery, and orange. Add all of these and the dry seasonings to the water pan, too.
I use pecan wood for soaking. Cook until the juices in the cavity are clear and the leg moves free at the joint.

I know it's cheating, but it sure is easy. Thanks.

Don't use mesquite, the skin will be as black as asphalt when your done.

I've got some Hickory soaking right now.

Don't put anything into the cavity. That insulates the interior part of the breast near the bone and doesn't allow it to cook evenly with the rest of the bird.
