Deer Sausage

Finished the first batch of sasuage this past weekend (30lbs)

Mix was closer to 55-45 boston butt/deer

Made Italian sasuage and I took some, added some crushed red pepper to the Italian mix and made spicy Italian. It was outstanding!

I need the Jalapeno/cheese receipe for the next one.

That 1hp Cabelas Commercial grinder is the tits FWIW

I think he used meat from the hind quarter, Don't really know. I know I used both shoulders, neck back bone and such for the sausage. There was one hind quarter in the ice chest when he came to finish up the sausage so I guess he took that made another roast, jerky and the rest for sasuage.

He confiscated the other hind quarter and cooked a humongous roast for himself and all the buddies

I made jerky from a hind quarter roast yesterday and that shite was TITS. Had to hide it to keep the daughters out of it.

Texjoy seasoning. Add a little more then it calls for. Add cracked red pepper. Add a little garlic powder. Put a bunch jalapeños. Awesome.

Seriously, not sure about measurements, but I'll guess. Half a cup cracked red pepper and half a cup garlic to about 60-70 pounds. Two big jars of sliced nacho jalapeños from SAMs. Just made about 250 pounds. It was awesome.

No this wasn't ground. It was the real shite. I marinade in Allegro, seasonings, some hot sauces, worchestershire, etc. Then poke a tooth pick through one end, hang it in the smoker from the racks and let er rip at about 150 degrees for however long it takes with hickory.

That was the first time I had made it in forever. I was pleasantly surprised. Next deer I see better look the frick out. I got plans for it's arse.

My pops made some jerky from one of the does I killed last week. He used the brisket and flanks under the belly. It's wasted meat usually and he decided to save it when we were cleaning her. Gotta say, just as good as any other meat for jerky. Usually we use a shoulder, but that was the first of the year so it was all earmarked for gravy meat.

I get that from the sleeping bag at about 5:15 AM.

Then a couple of weeks later I start looking at the freezer going, "I've got room over here I could put some in"
