Oven Roux?

Anyone ever do their roux in the oven? Yes its cheating but damn, whose got the time.

200 over night someone told me?

DO you need to start it on the stove first?

I talked with a family member over Turkey-day about doing this.

I don't know if I have ever had a roux that was done like that, but I'd rather just stir.

I did an oven roux last night and it turned out alright.

Making a roux quickly is not F'ing rocket science. Prep, have your trinity ready to go in when the color desired is reached, crank the heat and stir baby stir, trinity and lower the heat til trinity is right.

Well apparently you won't need to worry about how to remove the oil from the gumbo.
