What is blanching?

I've watched it on tv, but I don't know the purpose or the technique.

It is heating/cooking mostly veggies to a particular degree of "doneness" then rapidly cooling them(ice water bath) to stop the cookig process. The veggies will be re-cooked later by another manner of cooking, generally sauteeing them.

ETA, it is a great way to make it easy to peel tomatoes for other uses. An x-shaped mark is cut into the skin at the "bottom" of the mater, then placed into hot water bath, then cooled, the skin comes off with great ease. It takes about a minute in the pot to achieve the doneness required. Then cut it in half, and squeeze the seeds amd liquid out and you are left with just the flesh of it, chop and dice as needed.

Stopping the cooking process is important so veggies dont overcook and get soggy. Also keeps green veggies bright green.

Unblanched garden veggies will take in a funny color in the freezer. Blanching kills parasites, enzymes and shite.

at a very, very young age, i didn't know specifically the reason for it, but i did KNOW that we had to do too damyum much of it.

most vegetable platters you see at events will have blanched vegetables. They look better that way

At a very young age me and the siblings were the veggie/fruit pickers for farmers too poor to pay my dads Doctor bill with cash. I was the squirelly one at the tops of fruit trees. Getting paid this way, either farmer picked or by us kept us fed quite nicely. We also learned how to clean the harvest and prepare it once we were tall enough to see the stoe top.

Nope, the color stations were just being put out, the color tv was had in '64, and it was good but spent an assload of time in the shop. Three stations were the limits of the broadcasting towers availible.

I remember my pow pow had a t.v. that had a remote with 5 buttons on it.

One to turn it on, one to turn it off, and one for each channel it got.

Your tv was high class, our remote came with seven sets of hands, whoever was closest was told by dad to change the channel as he wanted to stay in his LaZBoy.

I think I remember my aunts/uncles/mom saying it was the first t.v. ever with a remote.

When I was a kid, I thought they meant that actual t.v. Ahh, being young was the best.

One thing for sure about that era is that you didn't see the assloads of fat children that are produced nowadays. It was expected that for the summer months that you were out of the house til supper was ready, then moms called out the names of thier broods. Another thing about that time was you were taught by the dads to shoot a gun before you were ten. A twelve guage packs a punch and is loud too.
