For you turkey briners...

I will join your ranks soon. I am planning to smoke one and roast one in the oven. What do you do with the cavity? I am thinking about just stuffing it with carrots, onions, and celery. Is stuffing necessary? We are a cornbread dressing kind of people. I will do stuffing if it serves a purpose, though.

Do not use stuffing while cooking, add stuffing to the cavity after cooking...if you are from the North.
While smoking, have onion, carrot, celery , apple, and lemon in the cavity.I have no use for a baked turkey.

Stuffing won't hut. I don't on smoking. Good call on the brining.

Yeah, it is by far and away the best turkey I've ever eaten. In fact, it's the only time the entire turkey is completely eaten at family dinner/holidays.
