McCormick has a seasoning packet for this - with recipe. Very easy and tasty.

Absolutely no need to blanche them. Just quarter, add diced garlic and chopped onion, seasonings, and rolled around in a bit of olive oil. Oven at 375 til fork tender.
For 40 minutes
If your in a hurry cook in microwave for 4 minutes after you have peeled and chopped tators

Made the crash hot potatoes tonight. Delicious. I underestimated the amount of seasoning needed for all the potato underneath the crispy top. Other than that, they were great. Loved the texture.

Quarter them, toss in a bowl with veg oil, salt, pepper and rosemary. spread on a baking sheet in 400 degree oven. No blanching required.

i made the hot crash sweet potatoes this weekend. they were pretty awesome. turned out great. I'm thinking of doing some sweet potato bites in a similar fashion. Cut sweet potato into 1/2 - 1 inch bites. boil until tender. throw in bag of olive oil/melted butter. throw in bag of seasoning. place on tray and bake until nice and crispy on outside, nice in mushy on inside...yum.
