SCOTT, La.—Few would dispute that southern Louisiana is boudin heaven. The local version is a sausage made of pork, rice and various seasonings. Trickier to answer is which of three competing Cajun communities is its official mecca.

Really, to me it's a discussion of whether you like the meatier boudin from around Lafayette (Scott is the mecca just because of all of the little boudin shops at the Scott exit) or if you like the ricier boudin around Lake Charles (not just Jennings, but places in Iowa and Lake Charles serve this style).
I'm good with both.

Seriously Jennings?
You would think Crowley would serve quality boudin with all the rice farms and such but Crowley to Jennings puts out some pretty woeful Boudin.

False, Lafayette has the best. Generally all "cajun" food in Lake Charles is some bastardized version of real food.

LC is East Texas.. I barely consider it part of the state.

Really, if you look at this guy (who's a ULL professor, so probably has Lafayette's bias), you'll see a pretty proportional number of "A's" in the Lake Charles area as you see in the Lafayette area.
Remember, Lafayette metro is much larger than LC metro.

Generally, I agree with you. I know LC well and it is where Texas and cajun culture collide and really, at the end, Texas culture mostly wins out.
But the boudin thing is legit. Billedeaux's is really good, as is Hackett's. Market Basket boudin is really good too. And it's distinctly different from what you get in Scott/Lafayette based on the proportion of rice to meat.
Remember, Lafayette metro is much larger than LC metro.

I might have to give a shot to some of those places, but every time I have had it from LC, the rice has been under cooked, it has been dry and it has lacked flavor.
I think the worst was from Boudin King.

I don't know if I've ever had Boudin King (may have had it at a Jennings High fb game at a tailgate I was invited to) but I've always heard that place's best days were 20-something years ago.
Rabideaux's in Iowa, Billideaux's on Hwy. 90 near Hwy. 171 in LC, Hackets on Hwy. 14 in LC and a few Market Baskets are the go-to places. Also, the sausage at these places, especially the venison sausage at Billideaux, are pretty good.
