Butt on smoker has me???????

I put a three lb but on this morning at 10am. It has been stuck at 165 for over an hour. At this rate it will be ready next week. I have been between 225-250 the whole time. Why is it stuck? Is it because its too small?

edit....Now it dropped to 163!!!

It's suffering from a classic case of over thermometering. Leave the lid shut and let er bump.

Mine is still on. Put it on at 7am. Read about "the stall" below.

check it precisely 7 more times in the next 5 minutes and if it drops to 162, throw the dang thing away and get some new butt..

I put a 9 pounder on yestetday at daylight. It got checked and tended to twice between the and when it was ate at dusk. Twas top notch.

I smoked mine for 4 hours then put it in the oven for another 6 hours. Fell apart.

That's a small butt. Anyway, I put the thermometer in the meat and leave it there. Reason being is I don't like a bunch of holes in my butt. One will do just fine. I don't like juices leaking out.

I drizzle some apple juice on my butt about every 1.5 or whenever I throw some more coals/wood on. I only smoke it till I get a nice bark and then I wrap it in foil, put in a roasting pan with some apple juice in the bottom, put the lid on and finish it in the oven.

After I get till around 190, I put a sheet of foil over the top of the pan along with a bath towel, and I let it rest for 45 minutes before pulling. This is a pic of my finished product from Saturday.

Mine came out good. it was a 5lb boneless and went for about 7 hours.
