What is with the love for a filet?

I'm on record for saying a filet is just about my least favorite cut of beef. I'd rather a sirloin that a filet. A filet just doesn't have the flavor of a strip, ribeye, sirloin, tri-tip or even flank or skirt.

I know it's expensive and I know they are easier than many cuts to get fork-tender...But what is the fascination?

I expect that response from many but was looking for reasons as to why you feel that way. Care to explain with something slightly more enlightened?

Filet haters mystify me.
a correctly prepared (notice i didnt say well done) filet is a juicy and delicious meal.
filets take saucing very well.

Sure they do. But a piece of meat with it's own flavor doesn't need sauce.

Nobody on this board is talking about well done beef.

And it's not that I hate a filet. Put it in front of me and I will eat it. Just not going to order one.

Wait, are you saying a prime filet is that much better than choice? You do realize that choice is the norm for filets at high end steakhouses...right?

I'd rather eat a ham steak than a ribeye.

Again, nobody has provided a legitimate response.

Is it just texture? If so I can accept than. But to say a filet has more flavor than a strip is disingenuous.

I like the texture, flavor, price everything about a filet. I can get a damn good, 6 oz. filet for around $6.00 and there is no waste on it. I have never liked the taste or texture of ribeyes.

Dont have to mess with any fat. Thats my favorite part about it.

It isnt my favorite cut by any means, but i waste meat to avoid fat on other cuts.

It's the tenderness. And it's not fatty.

Some good responses coming in now. See, I lake the fat. A well marbled strip or ribeye? There might be one bite of fat left. I eat the fat.

Its not my favorite cut either. I like a tbone more than anything. I like having a bone in my steak.

Salf, pepper, pass it through a hot kitchen, no fork or knife needed
