Egg Salad to go or recipe?

I've had an envie for egg salad for a week. I make a decent one but it's not great. Anybody got a recipe? And is there anywhere to buy some good stuff in BR?

More interested in a recipe...

I think I saw egg salad at Calvin's, but I'd call to make sure. The chicken salad is my favorite, so I would expect the egg salad to be good as well for people who like it. Not my favorite thing, but I haven't had egg salad in ages.

I know those feelings of cravings. Let me know if Calvin's has it and how it is. I want to try it. I think I don't eat egg salad because I've never had a good one and therefore, never had an urge to make it.

I never get egg salad from a store. I can't justify the prices they want for it.

The grocery store delis want to charge $5/lb and up, while you can get a dozen egss for under $2. A dozen eggs will make a shite ton of egg salad.

And I like my egg salad simple...eggs, mayo and salt.

Not only that, but if Calvin's or somebody has a good egg salad that is more than eggs, mayo and salt it's worth it to me simply to try it out. If I ate it every day or every week it would be one thing. But I'm not stressing about $5 for a lb. of egg salad twice a year.

My potato salad is plain as can be and is more egg than potato. Eggs, potato, mayo salt and pepper..and chunky.

I was just looking for a slightly different recipe. I've heard celery seeds, and green onions sound good.

Gris, my only reservation about Calvin's would be if they puree it like the chicken salad. I love their chicken salad but when I make it I make it chunky. Theirs is the only chicken salad I will eat with that consistency.

If Calvin's has it, you should be able to see whether it's chunky or not. Who knows, you might decide their egg salad is good even if it's not chunky like their chicken salad. I'm not a chunky chicken salad person, but I think I'd rather egg salad not be pate, though I would taste Calvin's to see.

I don't like pureed chicken salad either. I like chicken salad and potato salad chunky. Baked potato salad gives you a slightly different taste than boiled potatoes. Particularly if you grill them and get a bit of grill flavor in there.

One ingredient that I know GG and I always agree is awesome is smoked paprika. It will give your egg salad some depth.

Mines simple but good.

Boiled eggs chopped
Pickles chopped
Mayo
Little black pepper


Two pieces toasted bread

Then put a bunch of Zapps chips i'n the middle and smush down with hand.

Smushing is optional
