I have the same texture preference as Mr. Balls. I want the meat ground, whatever type of meat there is. No cubes and no shreds. Chili meat is okay, but I want some fine ground mixed in that.
Make sure the dry seasonings you use are fresh. I like beer in mine and a little unsweetened chocolate.
AND, NO BEANS FOR ME.

I just think that the implication is that cubed beef belongs only in a stew and not in a chili is one that is based out of ignorance.

Fixed it. And, I'd bet that the lagest majority of chili prepared in this country is with ground meat, not cubed. Had it both ways...fixed it both ways...I prefer ground meat texture.

My implication was I like ground meat chili. It was based out of preference. Kind of like you prefer a piece of shite cube meat chili. As you said, to each his own.

I'm not much of a measurer with chili, OG. I'll guess maybe an ounce or so to each pound of meat. Sometimes, I use unsweetened chocolate bars or Hershey's dry unsweetened cocoa. You can use semi sweet if you like a little sweetness.
