slice em up, add some fresh mint and greek yogurt then salt and pepper to taste

What kind of onions?

For the cucumbers, all you need to do is peel them, slice them thin, and put them in either Eyetalian dressing or white vinegar with a bit of salt and pepper...go to town.

Add a tomato to a salad with V&O, salt and pepper, chill.

I have white, yellow and purple. As for the cucumbers, I was hoping somebody had a good recipe for a cold soup with them.

In the summer, I keep a container of sliced cucumbers and onions in a mixture of half of about 1 part white vinegar and 3 parts ice cold water. I eat a bowl or put them on salads or on top of homegrown tomatoes. Good snack when you want something crunchy.

Bake the onions(white or yellow),wrapped tight tin foil for 45 minutes or more, with a bit of salt,pepper, and butter. Use the reds in pico or a salad.

I do the same, but add some salad vinegar also...

Cucumber-Mint Salad

1 large cucumber
1 onion chopped
1 tablespoon chopped fresh mint
1/4 cup rice wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
