I like mango salsa. You can run this in a food processor or just finely chop:

2-3 mangos
1 large red bell pepper
1 red onion
5-6 jalapenos (use more or less depending on how how you want it. I use 10)
1 bunch cilantro
salt to taste
cumin to taste

Goes great with tortilla chips or over fish.

My woman (a mexican) uses the above and adds a little garlic powder and green onions. She uses very little cilantro. That's it. But it always comes out fantastic. People ask for her recipe and they think she's lying when she tells them.

Just be sure to use the freshest ingredients you can find. Particularly the jalapenos. You can throw in a serrano or two if the japs aren't hot.

Tried the mango... Bit too hot for the females. I found it good. I added a bit of lime juice and orange juice to it. Very small add on like a cap of the lime juice and two caps of oj. Tried to cut down the bitchin but it was perfect for me.
