Lets say we hire someone on a 3 yr deal, we fire Les in next year or two, are we still on hook for remaining salary of coordinators if new coach wants to clean house?

It's a signed contract, so in most cases , Yes

Is it possible this might be one of Alleva's concerns? He might feel Les' job might be more insecure than we think and doesn't want to dish out more guaranteed salaries that could be a waste of money in a year or two. ?

they typically have a clause contingent on the status of the HC

that was one of the hangups that pushed Chavis to sign with A&M. He didn't want that clause in his contract.

Wasn't this the issue with Chavis? A clause in his new contract that said it was void if Miles left or was fired.

Yes. You're on the hook for the assistants too unless stated otherwise in the contract.
