They have changed their recipie, but it used to be 10 cups Dry LA Crab Boil, 1 8 Oz Bottle Liquid Crab Boil, 4 Cups Salt, 1 Gallon Lemon Juice (half at beginning half at soak), and 1 lb Butter at soak. My 5 gallon tank w 60psi regulator takes 40 min to boil my 100qt pot... From cold to rollin. Ive considered gettin a double jet or that larger spatula burner.... But didnt due to the size propane bottles I have. The dpuble jets will freeze the 5gal bottles if you dont have enough fuel in them.... I ...

my favorite in town, y taqueria on siegen by the gold store....was closed tonight. surely this is just a coincidence? if my place on siegen is closed, the wife and i are baout to go into depression. we eat there a couple times a week...

My single jet w high pressure regulator boils my 100qt pot 3/4 full of water from cold in 40 minutes. 2nd sack reboil in about 6-8, depending on when i light it again. As fin said earlier, the double jet w larger tanks can do it in 15-20.... ...

The previous head chef left a couple years ago... when Desi opened his place..... But it still has one of the best traditional steaks in the city. At one time, they were hands down #1. U would be amazed how many places nuke them in the microwave. Put them in a ziplock and seal the top. 30-45 secs maybe... Any longer an they may get rubbery...

Chef, Ive always wondered.... How long do u typically cook ur skirt w skin in order for it to be tender enough & the skin crispy enough? I assume u cook the meat then crisp the skin? Not being able to order it to temp kept me away from it... But ever since I tried a bite, im hooked. Wondering...
