We do at Mansurs but space is getting really limited. We spent all day yesterday confirming reservations and will finish up today so there may be a cancellation or two, pretty full menu selection....

One of our chefs sliced them super thin yesterday and made chips. Used a mandolin, fried them, finished crisping in the oven, touch of sea salt. They were pretty delicious....

Rye is perfectly acceptable for an old fashioned, of which I prefer anyways. Boirbon just is too sweet at times. I like the spicyness of a good rye....

Just got a case each if BB6 and Ghost at the restaurant. Me thinks a few of each will be coming home to my fridge. BB6 is really nice. Toned down the overly heavy spices if the 2013 release....

The cold weather has caused a slow early run this season. The spillways are finally starting to really open up. My dad is it the compound crawfish bait business and it won't be too long before prices drop. They will take a decrease after mardi gras but not a huge jump for a little while....

I've heard it's a second satellite location. Smaller and more of a bistro type atmosphere versus the fine dining look at the other. They seem to be doing just find off of Acadian and Perkins and the jubans actually own the building they are in there. TIFWIW...

I think the wine will improve but there are certain microcosms pertaining to soil, temperature, alcohol levels, cooperages, specific forests of wood sourcing that can not be put into a bottle of 2 buck chuck. Johnnie may have done as it is owned by Diageo as well but grouse is mainly highland park and macallan stocks if I'm not mistaken. If you want a smokey blender scotch, try black bottle. It's all Islay Malts and delicious but for real scotch lovers....

I enjoy a standard fish seasoning/blackening mix lightly on it. Get the pan got and quickly sear top, bottom, and sides and serve. Simple and delicious. Asian flare can work as well but the little bit of spice in the seasoning goes a long way....

Honestly you won't find a dish like that anywhere in the USA outside of the best french restaurants. Everyone will make stock from the bones or a rich sauce. I only dream of a whole duck pressed for the bone and blood juice here locally....

Pairings are great for wine dinners but my rule if thumb is I will drink whatever the hell makes me happy that night usually. The timeout or patio lounge. One of the two recently caught fire though (the one off old Hammond I think timeout). Patio is almost as divey as they come for Baton Rouge. Lots of Jefferson highway locals. Tucked right before the mcdonalds on Jefferson if coming from Essen....

Look at it this way though. The 64 sold for over $450k....and it was only 750ml. That mean the bottle there is equivalent in volume to 8 of the previous ones. So in all actuality, it had a higher price tag but was much less per ounce. That's $3140 an ounce versus $18,400 an ounce for the 64 year. :p...

I work the other six days of the week. Mondays and Thursdays are order day, Tuesday and Friday is getting orders and stocking, Wednesday is a big day for the restaurant. One manager does choir on Sundays. I've lucked out for Saturday all year, including football season. :lol: :cheers:...
