| Anyone know where I can buy rib cap steaks? Posted by LSUZombie Had a kobe rib cap at Stripsteak in Mandalay Bay in Vegas a few months ago and it was incredibly good. I've searched online looking to order them for delivery, but I'm having trouble. Do you think it would be best to speak to a local butcher to get this cut? | Lester knows his stuff. The cut you're referring to is spinalis. The "cap of the ribeye". Very tender and well marbled. Some local places have it, but you can always get it online. Reply Back to Top |
| We will get in the restaurant occasionally. We buy the whole cap and trim ourselves. Also called spinalis dorsi. Sells out almost immediately everytime we bring it in for specials. Will likely have it a couple times in December with all of the volume. Reply Back to Top |
