Beets. I used to hate them, but that was because my stepmom always served them out of a can.

Now I buy them raw/fresh and cook them myself. Delicious.

Wash your celery, but don't let it dry. Sprinkle it with a tad of salt. Mange.

That aint happening in the Zach household. You might as well tell him to dip it in velvetta, layer with smoked gouda, and sprinkle some fresh parm on it..

Roasted or grilled beets and brussel sprouts are beautiful.

I see what you did there. I wash it, peel away the first couple of stalks, chop them up and put in the compost pile (dogs don't like celery). I then chop the next two stalks into 4 inch pieces. Peel some raw carrots (throw the peels in the compost). Give the tips to the dogs. They love carrots.

Put the raw stuff in a bowl with some Chipolte Ranch dip. Put my headphones on to listen to Rush. Go outside on the deck with yesterday's WSJ, NYT and USA Today to listen during commercials. Watch my dogs play in the lake while I'm sunbathing.

Lately they are stalking turtles sunbathing on the boat launch. If I knew how to make turtle soup I'd have a good supply.

Mushrooms for me, but it has to be in something.

Same goes for fresh tomatoes, and it too has to be in something.
