I remember it not being difficult to skin. Then just filleted the meat off. Or chop up between the vertebrae.

I call the ones like this a Timber Rattler.


To clean it I make a cut near the head and start peel/cutting away the skin until I can get a grip and pull it off. Then remove the entrails and clean thoroughly.
